Roast beef

  1. Add the oil in a pressure cooker, fry the roast beef on high heat until brown from each side. Set aside. Add the carrots, garlic and onion and fry until brown. Pour in the wine and water and add the roast beef  again , add the cinnamon stick, bay leaves and the Delta rosto spices. Leave to cook in the pressure cooker for 1 hour.

  1. after the 1 hour set aside the roast beef to cool down while preparing the sauce.

  1. Drain the sauce from the pan to remove the cinnamon sticks and bay leaves then mash it in the potato masher to mash the vegetables ( carrot, onion, garlic) into the sauce. add it to a sauce pan and mix it well to boil. Stir in the corn starch and boil while whisking all the time until you obtain a thick sauce. as a gravy. Add the salt.

  1. N.B. corn starch should be dissolved in cold water first then added to the hot sauce.

  1. This roast beef can be served with mashed potatoes on the side and steamed vegetables
